Cooking with Ro | ‘This is how you make a nice cup of peanut sauce’

Because of his Indonesian grandma, anthropology student Roman is fond of cooking. Now that every garden smells like barbecue, it’s time to make homemade peanut sauce, to go with your chicken kebabs. ‘Or serve it with gado gado; a fresh Indonesian salad.’

Ingredients (for two persons)



- 100 grams of peanuts (unroasted and unsalted)

- 200 ml water

- 2 (hot) peppers

- 1 tablespoon of sambal

- 2 teaspoons of palm sugar

- 2 teaspoons of kitchen salt

- 1 teaspoon of trassi (shrimp paste)

- 2 keffir lime leafs

- Half a lemon



Heat some oil in a pan and roast the peanuts. Let them drain and cool down on a paper towel.


Bring 200 ml water to a boil with the juice of half a lime and the two keffir lime leafs. Also add the salt and sugar. Let it simmer for a few minutes.


Grind the peanuts in a blender, food processor or mortar. Add the ground peanuts to the boiling water. Cut the chili peppers and add thoe as well. Let it simmer until it thickens.


Lastly, add the shrimp paste and stir. Serve in a bowl.
